Traditional cooking and baking recipes are made for an age of huge families eating all together. And pie pans, cake pans, tray bakes are all designed for those larger scale recipes. That is just not the reality for most people today.

Singles, couples and small families are sorely lacking recipes and baking pans that meet their needs. Even within modern large families today, traditional desserts have limitations. Dietary differences, picky eaters, or taste preferences mean that having smaller desserts today is much more practical.

Bake a quick and easy fruit pie for one or for two using readymades or simple pie crust and fruit pie filling. Make it to share with that special someone for an Anniversary or Valentines Day. Or make it for one or two on any day, it is so simple yet delicious!

Ingredients
  

  • 1 sheet Pie dough Readymade or 1/2 recipe
  • 1 can Pie filling Cherry pie is depicted
  • 1 large egg (optional)
  • 1 Tbsp Large crystal sugar or decorating sugar (optional)

Instructions
 

  • Preheat oven to 400 F / 200 C
  • Roll out sheet of pie dough (readymade or homemade) to 2 mm / 1/16 inch
  • Place small pie dish upside down on the dough, cut circle 3 cm / 1 ¼ inch around the top of the pie dish
  • Turn pie dish over, and place pie dough circle inside the dish, making sure the dough is tucked in and letting the excess hang evenly over the edge
  • Slice the remaining dough pieces into strips for the top lattice about 1½ cm / ⅔ inch wide
  • Pour fruit pie filling (canned or recipe from Fruit Crumble) into pie dough lined pie dish
  • Place strips of pie dough on top in a lattice pattern
  • Crimp edges of pie dough up to form a tall crust and sealing on the top lattice
  • Brush egg (whisked) on the top of the pastry lattice as an egg wash
  • Sprinkle decorative sugar on top of egg wash
  • Bake for 20 to 30 minutes, depending on depth of pie filling. Fruit pie filling will be bubbling or Custard type fillings will be set with small jiggle in center.
