Flexible ingredient burrito recipe made from ingredients you have at home, super easy and quick. Burritos can be healthy, cheesy, for one, for two, for the whole family. Flexible Ingredients (OPTIONAL, based on what you have in your home)
2tbspCheese, gratedIdeally melts well & mild flavor such as cheddar, jack, gruyere, cotija, queso fresco / farmers cheese, cotija / parmesan, oaxaca
½cupMeat, poultry or fish (cooked or uncooked)
Seasoning - mexican/taco pre-made seasoning or mix of salt, pepper, chili pepper, garlic powder, onion powder, paprika, cuminto taste
2tbspSalsa, any you preferPico de gallo, salsa verde, etc.
1Chili, such as jalapenoto taste
Tomatoes, lettuce, cabbage, salad leavesto taste
½cupRiceplain or seasoned
2tbspSour cream or creme fraiche
Hot sauceto taste
Instructions
Heat the Tortilla
Heat the tortilla in a medium-hot grill, skillet or saute pan on both sides until outside is just getting dry and tortilla is warmed through, set aside on your plate open face
Make the Filling
Cook any uncooked meat or eggs in the medium-hot skillet or saute pan thoroughly. If doing BOTH eggs and meat, cook the eggs first until firm and then add the meat in another section of the pan until cooked, before combining together
Add salsa, seasoning, vegetables, chili peppers to the pan and stir fry until cooked and hot
Taste, adjust seasoning until just right
Separately, heat rice in the microwave until hot and soft, season with salt if desired
Assemble the Burrito
Sprinkle cheese on the hot tortilla
Place seasoned meat / vegetable mixture on tortilla in a line down the center, facing toward you, leaving room at the top and bottom
Add rice on top, keeping that line
Add any fresh tomato or salad ingredients on top
Add any additional hot sauce or salsa on top, to taste
Wrap Up your Burrito
Fold up the bottom end (closest to you) up and around the filling
Fold the right side of the burrito over the filling snuggly
Then roll the burrito toward the left, making sure the filling remains snuggly encased in the tortilla; roll until the left edge is under the burrito. Voila!
