Junket Probiotic Custard is a delicious dessert or snack, super easy to make in 10 minutes from scratch. A healthy treat rich in natural probiotics, yet something you and your family will crave. Flexible to make in your favorite flavors.
2cupsMilk, raw or kefir preferredCan add whey, Kefir or active yogurt to milk, cook at low on stovetop for one hour to activate probiotics
½cupmaple syrup (honey, caramel or other flavored syrup)
½tspground cinnamon
½tspground nutmeg
1/4tspsalt
Instructions
Make the rennet
Crush one Junket/Rennet tablet in 2 Tbsp water and disolve (or use 2 drops liquid rennet)
Make the custard
Warm milk to 90 F / 32 C in a sauce pan on the stove top
ONLY IF culturing the milk with whey, kefir or active yogurt, add it to the milk. Cover and keep on lowest heat for 1 hour, making sure the liquid stays warm and never boils or simmers.
Add maple syrup, spices and salt. Whisk in gently.
Add disolved rennet. Stir to combine well.
Keep on the warm heat (about 90 F / 32 C) for two minutes
Finish the Junket Custard
Pour mixture into four ramekins, equally
Cool at room temperature for 10 minutes
Refridgerate for 2 hours

Make your own delicious flavors. Its easy!Instead of Maple Syrup, try Caramel, Honey or other Flavored Syrups.Instead of syrup, use 2 Tbsp sugar into the mixture. Add extracts, zests or other flavors.Swap the cinnamon and nutmeg here for other favorite spices - use in similar quantities.For chocolate, melt chocolate chips into the custard.
